1. What Are the Key Stages of Chocolate Production?
The chocolate production process at Terravita is based on proven, traditional methods supported by modern technology. Everything begins with the careful selection of high-quality raw materials: cocoa mass, cocoa butter, and milk powder. These ingredients are precisely weighed and mixed according to a carefully developed recipe.
The next step is refining (rolling), which gives the chocolate mass its smooth texture. A key stage is conching – a long process of grinding and heating the chocolate mass that refines its structure and brings out its rich aroma.
Next comes molding, where tempering plays a crucial role – the controlled cooling and reheating of chocolate to achieve the perfect gloss and snap. The prepared chocolate mass is poured into molds and cooled at a specific temperature for a defined time. Once solidified, the bars are packaged and prepared for distribution.
2. How Is Quality Controlled at Terravita?
Quality control is one of the pillars of our operations. Supervision processes begin at the very first stage – the acceptance of raw materials. Each batch is thoroughly tested for physicochemical and microbiological quality.
Throughout production, we monitor key technological parameters to ensure the consistency and safety of every batch. Finished products undergo additional inspections, including assessments of appearance, texture, taste, aroma, and compliance with specifications.
We operate our own in-house laboratory and also cooperate with independent, certified research institutions. Regular employee training ensures that the highest standards are maintained across the entire production chain.
